The Uses of Stabilizers in Food Industry

Stabilizers are used in foods as an additive that helps maintain structure. The stabilizers in the food industry are basically compounds to increase the product’s consistency, stability, and quality, and to reduce the product’s cost. The stabilizer compounds are different for each food product.

For example, some kind of stabilizer gives cheese more elasticity, softness and roughness. For instance, in salad dressings, stabilizers are used to prevent the separation of water and oil and to preserve their original structure. Or a dairy stabilizer is used to prevent the formation of ice crystals in frozen products such as ice cream. The stabilizers are also used to prevent fruit settling in products such as jam, yogurt and jelly.
