Potassium sorbate
Potassium sorbate which is registered with the reference number E202, is a chemical and anti-mold which is available as water-soluble white powder. It is used as a preservative in the food industry. This preservative is not toxic in permissible amounts, and it demonstrates its best effect in PHs less than 6. The effective antimicrobial concentration of sorbate in foods ranges from 0.05% to 0.3%. Sorbate is effective against bacteria and also prevents the germination of spores and growth of vegetative cells. It also exhibits better resistance in acidic conditions compared to other preservatives.
