Ascorbic acid
Ascorbic acid is a powerful and water-soluble antioxidant. It has a 5-ring structure. It is also found in citrus, other fruits and vegetables. Like acids, vitamin C has a sour taste. Ascorbic acid is a good reducing agent and is easily oxidized. It is more easily destroyed by oxidation than all vitamins and it may be oxidized by exposure to air in fruits and foods with a cut surface.

Uses of ascorbic acid:
By reducing the pH, it inhibits the growth of germs. It is used as an additive and preservative to enhance the quality and stability of a wide range of food products including bread, meat products, jams, jellies and other sauces. In meat processing, ascorbic acid reduces both the amount of the added nitrate and the amount of the remaining nitrate in the product and preserves the color of the meat product.
