Ammonium bicarbonate is most commonly used in low-moisture products such as biscuits and cookies. Edible dry food grade ammonia is decomposed into carbon dioxide, ammonium, and steam in a bakery under heat, and therefore acts as an aeration agent and is mainly used in the biscuit industry. It is mostly used as a foaming agent in baked goods such as bread, cookies and cakes.
